“The idea had been around for a long time, but it took nearly nine years before we had all the permits.” Nevertheless, Petra and her family didn’t let that get them down and saw the char farming project in Gunzesried through to the end. The most important factor in choosing char back then was the ice-cold spring that flows from the Nagelfluh. This water would have been far too cold for a trout.
During the three years it takes for a fish to reach harvest weight, it’s not uncommon to develop a certain bond with one or two of them. Like the time with a fish that was caught weighing over 8 kg.
