Compiling orders, preparing the dough, and then assigning tasks to the team—that’s Hubert’s routine at 2 a.m. A native of Balderschwangen, he lives almost exclusively in Burgberg. Only on weekends does he make his way up to his parents’ house on the mountain.
The fact that he now has the only roll-shaping machine in the Oberallgäu is nothing special to him, because he doesn’t want to “waste” valuable labor on tedious tasks like shaping rolls.
Together with Hubert, HUBERTUS developed half-baked rolls many years ago, which we now bake fresh several times a day. Of course, size makes a difference here, too. After all, with the small rolls, you can easily try two or three different kinds.
